    try wild pork bacon, i got a big ass wild pork roast fresh out the oven about to devour it. just found this thread, while lookin @ sodium nitrate

    3 kilos just went into the fridge to cure. One of my coaches has a cold smoker too.

    Salt, cure, pepper, coriander, mace. Couldn't find my star anise.

    Keen to give this a go, however I only have a Weber kettle and I donít have a temp probe yet (other than the hood mounted probe), can I cold smoke on a kettle? Or do I need an offset?
